Life Lately: Whirlwind Week

This week has definitely FLOWN given the circumstances in my opinion. We have been doing good keeping the norm around here, but it’s also hard not to think about how long these troubling times will last!

We are trying to stay positive, but the one thing we are all really bummed about is cancelling our vacation. We were SO looking forward to some sun, warmth and making memories with the kids and it is always surreal to me that we will most likely have to wait ONE WHOLE YEAR for this trip. The kids will be ONE YEAR OLDER and that is sad for me to think about.

Okay, enough of the sob story, I would like to get on here and share some positive things that have been happening! I’m sorry for the poor posting this week, like I said, the week completely slipped away from me and I was not prepared at all!

Thrifty Thursday – How I Shop for Baby Supplies

This week I wanted to share some ways I save when it comes to all things baby.

First off, taking three kiddos out and about particularly during this phase in life is quite an endeavor. I used to do it with two a lot more often and now I am opting for online shopping since we live in a world of 1-2 day shipping! I purchase my baby products via Target because I think I end up saving more the way I do it (I had an excel sheet breaking down costs including the gift cards I would receive, ha!)and I really love their Up&Up brand.

What I Cooked Wednesday – Switching Up Breakfast/Brunch

The past two weekends we had some brunch/breakfast get togethers. We finally got together with my best friend and her family to exchange Christmas gifts (that took wayyy to long) and we celebrated my sister-in-laws birthday at my parents.

Breakfast and brunch dates just seem to work well with everyone during this stage in life. The kids are in a better mood, we are up and coming back from church at that time, the kids are able to nap right after the festivities and on a Sunday – a dinner get together would be tough.

What I Cooked Wednesday – Mexican Stuffed Peppers

I’m a big fan of traditional stuffed peppers (ground beef, rice, onions, tomato soup, salt and peppers) – which are so bland in my husband’s opinion! I bought a big bag of bell peppers from Costco last week and I thought – stuffed peppers on the brain for dinner.

Problem is, they couldn’t be plain old boring stuffed peppers…I had to spice these up a bit for my husband to even give it a chance! Mexican Stuffed Peppers for the win!!

Optic Nerve Hypoplasia – Questions

I’ve had the chance to connect with so many sweet people through social media who either deal with ONH themselves or have a child or loved one who was diagnosed with it. Knowledge is power and I know I like to hear about others’ experiences – whether it relates to things they have heard from their doctors, patch time successes/failures with their kids, procedures and therapies that need to be done or how they manage their day-to-day – I truly find it uplifting and valuable information.

I know I have mentioned this previously, my daughter was diagnosed with a unilateral and an isolated case of ONH. By no means am I a medical professional, this post is strictly to share how we we’re advised and the diagnosis we received. I will also share some more details regarding the other specialists she was referred to and what was needed to be done in future posts.

A Look At….My Favorite “Healthy” Breakfast

Breakfast is honestly my favorite meal of the day. I do not discriminate and honestly love ALL breakfast foods. While I can get caught up with sugary, carb heavy breakfast foods during the week – I like to toss this heart healthy breakfast into the mix. So many people are hit or miss when it comes to loving oatmeal, but if you doctor it up correctly, it’s GOOD (swear)! This breakfast is super easy and the flavors are just so YUM!

Tip Jar: Infant Sleep Schedule

First off, I am NOT a baby sleep trainer professional. This is strictly based on a whole bunch of research I personally did as I was preparing to become a stay at home mom after the birth of our son two and a half years ago.

I was so so excited, but also a little nervous about becoming a stay at home Mom. For me, it was a huge transition leaving my marketing career. I truly loved the vibe of working downtown. While I valued my career, I always knew I wanted to be a stay at home Mom. I always wanted to be around/play with our kids, manage a household and have our own set routine.
