My goodness, what a week it has been. Praying for Texas and everyone affected. I could not imagine what people are going through. So instead of sharing Friday FAVORITES just sharing five things today.
I will start out by saying that the start of the Lenten season was this week and I’m looking forward to strengthening my faith and challenging myself to walk more like Christ – which can be hard to do. Lent is a time to take on those crosses and work to better ourselves for the ultimate goal in this life – eternal life.
Family Slumber Party
Our boiler decided to break on the coldest days of the year so we had to keep ourselves by our gas fireplace for two days. Honestly, we hardly left that room and closed it off from the rest of the house.
While it stunk to not have heat, it also put things into perspective. We are blessed with a roof over our head and there so many other people are suffering out there – especially given the situation in Texas.
The family sleepover was something I will never forget and something the kids will never forget.
Yummy Meals
We’ve been on a roll cooking really healthy around here and sticking to our meal plan!
Last night I made Pasta Fagioli – check out my stories for the recipe (also saved in my recipes highlight)
Also, this air fried veggie pasta was BOMB! Place some peppers, zucchini, yellow squash, red onion and spinach (all coated with oil, s&p, garlic salt) into your air fryer. Took about 15 minutes to softened and brown. Then serve them on top of some quinoa brown rice noodles. Pour on your warmed marinara (we used the Costco brand) and I’m telling you – so tasty and light!

Beautiful Sights
While it was BITTER cold, the gorgeousness of winter was on full display at times this week!
Spring Ready
This weekend I did a couple things spring related…
I’ll share more decor with you in the upcoming weeks, but it was nice to bring out some color!
I also got my first batches of seedlings planted and cannot wait to watch them GROW and get a jump on the season!
I’m focusing on some hardy annuals right now and I made a mini greenhouse to keep outside as hardy annuals need freezing temperatures to germinate – so this will be a fun science experiment!
We did a family sleepover like that one year when a huge hurricane was blowing through and my boys still talk about it to this day! I remember it being less than fun at the time with the wind howling and the whole house shaking and all 5 of us getting little to no sleep but it a great family memory to look back on. Your food looks delicious!
That family sleepover looks like so much fun. I love the sunsets!!
