What I’m making Wednesday – Lemon Butter Chicken

Hey, hey, hey and happy Wednesday! These weeks are just flying right on by! I laughed with the kiddos – I feel winter break has just extended into January! The kids had a four day week last week and now another one this week! We’re basically part time school over here!

Anyway, today I am sharing a family favorite around here – lemon butter chicken. It is so simple and very tasty!

A trick I use to make this quick and easy – is utilizing my go-to breaded chicken that I will share below! Soon I’ll have to type out the many recipes I use with this simple breaded chicken, but for today -here’s how to make a yummy lemon butter chicken!

Lemon butter chicken

  • 1 – 1.5lb thin-sliced boneless skinless chicken breasts
  • 2-3 eggs
  • 1 tsp of italian seasoning
  • 1/4 c grated Parmesan cheese
  • 1/2 c Italian seasoned breadcrumbs
  • 4 tbsp flour
  • 1 stick of butter
  • 2-3 cloves of minced garlic
  • 1/4 c – 1/2 c lemon juice (2-3 lemons)
  • 1/4 c chicken broth
  • 1/8 tsp garlic salt
  • black pepper (preference)

Okay so we start by breading the chicken…Pat your chicken dry, dip your chicken in egg and Italian seasoning, then in your breadcrumb, flour, Parm cheese mixture. Set them aside!

Now for my easy breaded chicken – we’re going to do this in the air fryer. Heat your air fryer to 400. Spray with non-stick spray. Depending on the thickness of your chicken, we’re going to cook for 8-10 minutes flipping halfway!

Voila, done! And perfectly crisp and cooked every time!

While the chicken cooks, melt butter in a skillet pan. Add garlic and cook for 2-3 minutes.

If you like your sauce a little thicker, you can make a quick slurry and whisk into the butter. I do this by whisking up a tbsp of flour to a tbsp or two of water. Pour in slowly and heat the flour for a minute or two while whisking.

Next we’re going to whisk in our chicken broth and lemon juice. I did about 1.5 lemons (you can adjust to your lemony tang preference!). Let it simmer for 2-3 minutes. Add some salt and pepper and taste test! We like to use garlic salt as well – careful how much you put in!

Okay, now that the sauce is done, we’re going to add our breaded chicken. Add them to the skillet, lower the heat and let them absorb the sauce! Again, we’ll do these for about 2 minutes a side!

After the chicken soaks up all that butter sauce on both sides remove from heat and let it sit. It will thicken up just a little bit more!

Then serve it up with some orzo, noodles, mashed potatoes (whatever your in the mood for) and some salad! Top the chicken with a little extra lemon butter sauce and dinner is served!
