Today I’m sharing myself and my family’s most FAVORITE soup – Chicken Noodle! We are BIG soup lovers around here and this is constantly on the menu ALL. WINTER. LONG!
Homemade Chicken Noodle Soup
Normally I will take a picture of all the ingredients you will need, but I forgot! SORRY! Here is a list of everything though!

- 2 cups cooked/shredded chicken (I like to use leftover rotisserie chicken or 2-3 boiled chicken breasts)
- 1 cup celery, chopped
- 1 cup carrots, chopped
- 1 small/medium sized yellow onion, diced
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tbsp minced garlic
- 48 oz chicken broth (I usually use 1 1/2 32oz chicken broth containers)
- 1 cup water
- 1/4 tsp salt (this measurement is to start – you will add more based on preferred taste)
- 1/2 tsp garlic salt
- 1/4 tsp poultry seasoning
- 1/4 tsp black pepper
- a dash italian seasoning
- 1 box of noodles (we like to use ditalini, rotini, wide egg noodles or acini de pepi – use a 1/4 box with the acini noodles) – cooked in a separate pan
Dice and chop celery, carrots and onion and saute in olive oil in a large saucepan on medium-high heat

Saute the veggies for 5 minutes

Then add 2 tbsp of butter and saute for 5 more minutes

After the butter melts, add your minced garlic – cook for 2 more minutes

Now it’s time to add the liquid. Add your broth and water and bring to a boil

After the soup comes to a boil, add your cooked chicken. (I bought an extra rotisserie chicken from Costco, shredded it, and placed soup portions into gallon bags so I can put away in the freezer)

IN THE MEANTIME, START BOILING WATER IN A SEPARATE SAUCEPAN FOR THE NOODLES – COOK NOODLES AS INSTRUCTED.
Separate/stir in the chicken and bring to a boil

Simmer for 15 minutes then add your seasonings…

Okay, so I personally think this ingredient makes ALL the difference in this soup – my very secret ingredient – POULTRY SEASONING!
I let it simmer for a couple more minutes, and will generally taste test before serving to see if more salt, pepper or garlic salt is needed.

TO SERVE: Place cooked noodles in a bowl and ladle soup on top!


Sometimes I add a sprinkle of Parmesan cheese to the top – this is optional!
