I kinda sorta have a love/hate relationship with winter weather. So much beauty a big snowstorm can bring!
Soup and Snow Play
Stop getting so big, please…
A little homemade soup and crescent rolls were all we needed for an afternoon of snow play!
I love to make homemade soup, it is so easy and normally I start with the same base ingredients if I have them on hand: celery, onion and carrots. I had one leftover zucchini I decided to throw in as well – so my soup turned into a corn and zucchini broth soup.
Instead of egg noodles, I opted for the Acini di pepe noodles – this soup was YUM!
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 1/2 an onion
- 1 zucchini, chopped
- 1 32oz container of chicken broth
- 1 can of corn
- salt and pepper
- 1 tsp parsley flakes
- 1/3 cup Acini di pepe noodles
Softened carrots, celery and onion in 1 tbsp of olive oil on medium heat. Add zucchini about halfway through.
Add broth and canned corn, seasonings and bring to a boil and reduce heat to medium – cook for about 10 minutes
Turn the heat to medium-high and add your noodles. Cook for 10 more minutes until the noodles are cooked. Easy peasy, serve with crescent rolls!
Top Golf Night Out
This. was. fun! Especially coming from a former collegiate golfer! I kid you not, I went from playing golf multiple times a week (pre-babies) to not touching a club or swinging for 3 years!
I was so excited to go to Top Golf for my brother’s birthday and I was pleasantly surprised of the outcome! Now I have the itch to start playing weekly again in the summer. We will just need a babysitter for that, ha…
If you have a Top Golf near you, I highly recommend for a date night or group night out with friends. It was a blast! Basically, you click on your name, scan your club to receive a ball and try to hit and get points at the targets.
You hit 5 in a row and then the next person is up.
The food was super good, they served alcohol and the other neat thing – we were outside playing golf in JANUARY, in Cleveland. The heaters and couches we had in our bay were COZY!

Lactation Cookies
Okay, this is a Friday fav for me, because it RESURRECTED my breastfeeding from rock bottom. I posted yesterday, that Baby T had RSV/Bronchiolitis. We lost our mojo and I needed something to get my milk supply back up once he was ready to feed full out again.
I decided to try making lactation cookies and I am SO happy I did! It seriously worked! I would eat about 3 a day – morning afternoon and night and went from pumping 2 oz from both sides to 2-3 oz per side! Thank goodness we are getting back to normal over here!
