Okay, this may look really good to some and totally random to others! I just have to share my recent lunch obsession because I kid you not, I craved it every day this week.
You certainly could switch up things and try different veggies, but I am a huge sweet potato fan! You can also add the Costco chicken skewers to this, which I’ve done plenty times as well!
Sweet Potato Hummus Bowl
- 1 sweet potato, cooked – microwaved for 4-5min
- 1 package of 90 second rice (I like jasmine, brown rice & quinoa blend or the white sticky rice from Costco)
- 1 dollup of your favorite hummus – I use the Kirkland hummus single serve cup
Throw it together, mix it up – and there you have it
A quick, easy and inexpensive lunch that is healthy and sure to fill you up!
