What’s Trending?! – Mocha EVERYTHING

What’s trending around our house here lately? The answer is MOCHA/COFFEE flavored everything!

First, it started with Mocha Chocolate Chip Cookies…

Then I moved to trying whipped coffee…from there I proceeded to start doctoring up morning coffee and get creative…

Coming around full circle, this time making Mocha chocolate chip CAKE mix cookies…it has not STOPPED.

Today, I wanted to share these amazing Espresso flavored chocolate chips that really inspired this whole “trend” and turned my most favorite cookie dough recipe (from Pioneer Woman) into MOCHA CHOCOLATY CHIP COOKIES!

I found these at Walmart pre-quarantine and the employee checking out my groceries actually took a good look at them and was like “my goodness, those sound good, what are you going to do with them?!” At the time, I had no clue, I just know I needed them.

Honestly, there are so many options – how amazing would mocha chocolate chip pancakes be or mocha chocolate chip muffins? YUM!

Without further ado, here’s what I did to make these Mocha Chocolaty Chip Cookies!

Again, I love Ree Drummond’s cookie dough recipes – they are so delicious, so I used her Triple Chocolate Chip cookie recipe as my base.

  • 2-1/2 sticks Butter, Softened
  • 2 cups Sugar
  • 2 whole Large Eggs
  • 3 teaspoons Vanilla Extract
  • 2-1/4 cups All-purpose Flour
  • 3/4 cups Unsweetened Cocoa Powder
  • 2-3 tablespoons of instant coffee granules
  • 1-1/2 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 3/4 cup White Chocolate Chips
  • 1 cup Rex Coffee Espresso Baking Chocolate Chips
  • 1/2 cup of Heath Toffee bits (optional – if you skip these feel free to add more white chocolate chips or espresso chips!)

INSTRUCTIONS
Preheat oven to 350°F.

Using a mixer, cream butter and sugar until fluffy, scraping the sides once (make sure the butter isn’t too soft/warm, this will flatten your cookies!)

Add eggs one at a time, mixing after each addition. Mix in vanilla.

Sift together dry ingredients, add in batches to the mixer, while mixing, add in your instant coffee granules.

Gently blend in chocolate chips and Heath bar bits (optional), reserving some chocolate chips for the tops of the cookies.

Using a cookie scoop, add generous 1 tablespoon portions to baking sheet. Dot the top of each cookie with 2 to 3 chocolate chips if you’d like them to really show up on top

Bake for 9 to 11 minutes or until cookies are barely done but still soft and chewy. (Don’t overbake!) Wait a couple minutes before placing them on the cookie rack so they set a little bit!

    I bought Nestle’s espresso chips awhile back and we also used them to bake up some cookies but I am kind of kicking myself for not thinking of making them chocolate; I mean what is better than coffee and chocolate paired together?! These look fabulous. Pinned.

      I totally recommend – I love double chocolate chip cookies so much, so I figured why not swap the chocolate chips for espresso ones! Have a great weekend!
