What I Cooked Wednesday – Switching Up Breakfast/Brunch

The past two weekends we had some brunch/breakfast get togethers. We finally got together with my best friend and her family to exchange Christmas gifts (that took wayyy to long) and we celebrated my sister-in-laws birthday at my parents.

Breakfast and brunch dates just seem to work well with everyone during this stage in life. The kids are in a better mood, we are up and coming back from church at that time, the kids are able to nap right after the festivities and on a Sunday – a dinner get together would be tough.

I have made this breakfast casserole before, and we absolutely love it! We served it with hash browns, fruit and my girlfriend brought over the most divine cinnamon rolls from Costco!

Sausage Breakfast Casserole

I got this recipe from Lil Luna. Super easy and great reviews!

  • 1 lb sausage (we used the Bob Evans Original ground sausage)
  • 1 package crescent sheet (Pillsbury)
  • 1 cup shredded cheddar cheese
  • 8 eggs
  • 1/4 cup milk (a little over because we added a couple more eggs than what the recipe suggested)
  • 1/2 tsp salt
  • 1/4 tsp pepper

    Preheat oven to 400

    Brown sausage in a skillet over medium heat, breaking it up

    Unroll crescent sheet and spread onto the bottom of a greased 9×13 pan

    Spread sausage over the crescent sheet and sprinkle cheese on top

    In a bowl, whisk eggs, milk, salt, and pepper. Pour over the top

    Bake at 400 degrees for 15-20 minutes until eggs are set and crust is golden.

Breakfast is served!!

Yogurt Parfait Cups

These were fun to make! Do you ever feel like you offer to bring the same ole thing to family parties? I really wanted to switch it up and these just sounded so refreshing!

Vanilla yogurt carton
1 lb of strawberries, sliced
1 pint of raspberries
1 pint of blackberries
1/2 c chopped coconut cashews
1 package of granola – I used Vanilla Almond

Whipped Cream
1 cup of heavy whipping cream
1.5 TBS of powdered sugar

First things first,

Homemade whipped cream is a must – I went a little lighter on the powdered sugar so it wasn’t an overly sweet whipped topping.

1 cup of heavy whipping cream
1.5 tbs of powdered sugar
Beat together for ~3 minutes

I whipped this up before mass and put it in the fridge to set for a bit before we left.

Chopped up some of these….

I wanted to add another dimension of flavor to the parfaits rather than the granola and these coconut cashews added a nice sweetness.

I also chopped up my strawberries and washed all the fruit so I was ready to assemble when I arrived at my Mom’s!

This was how I layered them!

Raspberries…

Top with Coconut Cashews…

Add a couple tablespoons of vanilla yogurt…

Top with granola…

Add some blackberries…

Top with granola and some more strawberries on top…

Finish it off with the whipped topping!

Such a refreshing treat and fun to switch up from the normal pastries or donuts we would bring!
