Good morning everyone! Happy Cinco de Mayo! The quarantine is definitely making Cinco de Mayo plans look a little different for everyone this year!
Since we will be home and not out at a restaurant, we decided to share a twist on a regular mango margarita that you can make at home. My husband is OBSESSED with Bai Flavored water. They are SO SO good and there are so many different flavors! We’ve always said how tasty they would be in all different types of mixed drinks and cocktails – you could really get creative!
We decided we wanted to doctor up a coconut mango inspired margarita in honor of Cinco de Mayo. This is a slushie margarita and can be adjusted in many different ways to fit your taste palette.
1.5 cups of frozen mango chunks 1/2 cup of ice
2 tablespoons of agave nectar (you could sub. with honey)
3/4 cup of Bai Coconut flavored water – Madagascar Coconut Mango
2 ounces of silver tequila
1.5 ounces of triple sec (or other orange liqueur)
2 limes – the juice of 1 lime to be blended; the other lime cut to wet the rim and for garnish
1/4 cup of sweetened coconut (will be toasted: see directions below) mixed with 1 tbsp of sugar
Optional – but it really adds some yummy coconut flare!
Preheat the oven to 325 degrees and place a layer of sweetened coconut onto a cookie sheet or piece of foil. Toast the coconut for about 9 minutes; moving it around for equal toasting every couple minutes.
Put the frozen mango, agave nectar, Bai Coconut Mango flavored water, tequila, triple sec and lime juice into the blender. Depending on the consistency you want, add more frozen fruit (for creamier or add more ice for slushier) or more Bai flavored water (for a more liquid-y consistency).
Cut a lime wedge and use it to wet the rim of your glass. Chop up your toasted coconut into fine bits – add some sugar to the coconut mixture.
Dip your glass into the coconut/sugar
Pour in your margarita and garnish with your lime!
For a non-alcoholic beverage, simply swap the tequila with the Bai Madagascar Coconut Mango, and the triple sec for orange juice.
You could use fresh fruit, but I prefer frozen. If you use fresh fruit, you can add 1 cup of ice and 3-4 ounces of fresh fruit.
You could do pretty much any frozen fruit you would like – strawberry, peach, raspberry and pineapple. Also, you can get creative with the combination of flavors.
