What I Cooked Wednesday: EASY Chicken Broccoli Rice Casserole

Ready for a quick and easy dinner that EVERYONE loves?! Sharing such a simple recipe for those busy nights where you dread cooking!

Chicken Broccoli Rice Casserole

Obviously this recipe is nothing new, but what I like to try and do is make the recipe EASIER. In this particular recipe I have three tips to speed up the process.
1. Use THIN sliced chicken breasts. It literally takes them 5 minutes to boil up – bam cooked chicken in a heartbeat. Obviously you can use pre-cooked chicken or rotisserie chicken. I only used one and a half chicken breasts, save the other boiled chicken for use in another meal (soup, salad or wraps)


2. Use 90 second rice if trying to save more time. I love the 90 second rice bags. Our family eats them ALL the time. An absolute staple in our house. This can help speed up the process especially if you are using pre-cooked chicken
3. Save yourself the dish I’m always looking for ways to save myself time and dish washing! Pop all the ingredients for this recipe in your 9×13 pan and call it a day!

1-2 cups cooked chicken
2 cups cooked rice (or two bags of 90 second rice)
1 bag of frozen broccoli florets
2 cups of cheddar cheese (save 1/2 cup for top)
1 can of cream of chicken soup
1/2 cup of mayo
1/2 cup of chicken broth
1/2 tsp salt
1/2 tsp garlic salt
1/4 tsp pepper

Preheat the oven to 350 degrees
Boil your chicken breasts, shred it,place in 9×13 pan

Prepare rice (using your preferred method)
Microwave your broccoli and voila, the hard part is done!
Add soup, cheese, mayo and chicken broth and seasonings to the 9×13 pan.

Mix all ingredients, top with the remaining cheese
Bake uncovered for 15-20 minutes
