What We’re Cookin’ Wednesday – Two Weeks of Dinner

I don’t know about you, but lunches and dinners have just been different around here lately. First off, the convenience of heading out to the grocery store whenever and wherever you want is no longer – therefore you are forced to map out your meals or “work with” what you have.

Second, is it me, or are the kids eating/snacking more than normal?! I think I have been more aware as I am “rationing” them given the circumstances – another factor, adding another adult to our lunch crew, that can chew up some of the goods too!

Anyway, I figured I would share a look into our dinners for the past two weeks to give you some ideas and/or provide some help during these not so normal times. If you are able to have groceries delivered or can do curbside pick up- I am hoping this can give you a sense of what you will need to have on hand (at least a broad overview!).

Two Weeks+ of Dinner Ideas

I will try and share the ingredients you will need for these recipes, but to type up each recipe is A LOT in one post! I wanted this to serve as a resource to get some ideas on how to switch up from the every day monotony of cooking the same things for dinner. One thing to note, we have been on a major soup kick, and I’m not complaining about it! Also, we try to order take out from our local restaurants in town to help support them during these challenging times!

Chicken

I bought a rotisserie chicken last week and made sure we used every last bit of meat on that thing! I was able to get a bunch of meals out of it, here are some ideas for you:

Chicken Casserole
Chicken//Egg Noodles//Cream of Chicken Soup//Breadcrumbs//Milk//Melted Butter//Cheddar Cheese

Tortilla Chicken Soup
Shredded Rotisserie Chicken//Red Pepper//Onion//Chicken Broth//Canned Corn//Can of Black Beans//Homemade Tortilla Strips

Buffalo Chicken Wraps
We like to do these a lot! You could easily make this a BBQ wrap too!
Rotisserie/Grilled/Cooked Chicken//Buffalo Wing Sauce//Cheddar Cheese// Cucumbers//Tomatoes//Lettuce//Ranch Dressing – serve with Bob Evans Mac n Cheese

Chicken Salads
Easy peasy – your choice of greens and whatever fixin’s you want!

Chicken Quesadillas
Place shredded cooked chicken on top of a tortilla – add beans//bell peppers// corn//onions//jalapeno slices//shredded cheese – top with second tortilla and cook in skillet – serve with sour cream, salsa and guac

Creamy Chicken Corn Chowder
This is just YUM!
Carrots//Red Pepper//Onion//Shredded Cooked Chicken//Diced Green Chiles//Red Potatoes//Canned Corn//Chicken Broth//Whipping Cream//Cooked Bacon Bits

BBQ Chicken Grilled Cheese
Texas Toast//Cooked Chicken//Fav. BBQ sauce (we love Sweet Baby Ray’s)//Cheddar Cheese Slices//Ranch Dressing

Vegetarian Meals

Vegetables in a White Wine Sauce served over Angel Hair Pasta
Zucchini//Onion//Baby Bella Mushrooms//Garlic//White Cooking Wine//Butter//Angel Hair Pasta

Meatless Taco Salad
Bagged Salad//Knorr Rice Sides: Taco Rice//Red Onion//Tomatoes//Avocados//Shredded Cheese//Salsa//Mild Taco Sauce//Ranch Dressing//Homemade Tortilla Strips

Beyond Burger Night
Grilled Beyond Burgers – season with Weber Steak n’ Chop-top with all the burger fixin’s//serve with asparagus//tater tots!

Coco Wheels and Marinara Sauce
Self explanatory and a fam favorite!

Mediterranean Bowls
We are OBSESSED with these and make them A LOT!
Quinoa//Hummus//Cucumbers//Chickpeas//Kalamata Olives//Feta Cheese//Tomatoes//Greek Vinaigrette Dressing

Veggie Flatbreads
We like to use onion//marinated artichokes//tomatoes//spinach on ours

The Aldi flatbreads are amazing!

Fish/Seafood Meals

Breaded Butterfly Shrimp – served with homemade potato wedges and broccoli
These shrimp from Aldi are PHENOMENAL! We’ve had these every Friday of Lent thus far and we will never get sick of them! There are roughly 12-15 per pack

Grilled Salmon – served with 90 second rice and a veggie
A staple at our house – in case you missed it, here is the technique my husband uses to grill the most PERFECT restaurant quality salmon…little secret… this seasoning is BOMB!

Pork and Beef

Hamburger Helper
We love the Beef Pasta – easy and a family favorite

Spaghetti and Meatballs or Meat Sauce
My all time favorite meal! I like to spend the day making mass quantities of meatballs and safe them in my freezer for future use – so if I have those, great, if not I pull out some ground beef to whip up a meat sauce

Grilled Pork Tenderloin
Served with Bob Evans Mashed Potatoes//Broccoli

French Dip Sandwiches

Done in the crockpot – Chuck Shoulder Roast//1 bottle of beer//can of beef broth//can of French onion soup – serve with provolone cheese on a hoagie roll

Pasta Fagioli Soup
I love this soup so much! We made it with alphabet pasta to keep it interesting for the kiddos – served with a side of roasted brussel sprouts

Breakfast for Dinner!!

We LOVE making breakfast for dinner!

Traditional
Eggs (scrambled for us)//Hash browns//bacon or sausage//toast

Waffles/Pancakes
Served with eggs and fruit

Sausage Potato Hash
I had a chorizo hash in Denver at my cousin bachelorette party years ago and I’ve duped this recipe so I can enjoy it here in Cleveland!

Cooked ground Sausage//Roasted sweet potatoes, red pepper, yukon potatoes and red onion in balsamic and olive oil- combine the two in a skillet and let them brown together – cook over easy eggs – serve it up and crush the over easy egg with your fork and like the yolk run EVERYWHERE – DELISH!!

Support local

We’ve been trying to order take out at local restaurants at least once a week. These businesses are taking a huge hit and they need our help! Also, how nice to have a day off from cooking, right? Happy Wednesday, friends!
